A: I never used the hooks on my Dyna-Glo at all, and I certainly wouldn’t risk it with ribs. Seems to me they’d be likely to separate and fall once they reach 195 or so and the collagen melts.
A: I have never tried it, but I can see where it could be possible. You would have to remove several racks to make hanging room. Ribs may fall after reaching tenderness. The rib rack works good. May need to cut and shorten rib to fit properly. Very good smoker.

A: There is a vent on the side of the firebox, and there is an articulating valve in the chimney, although that valve does not completely close air tight. There is enough air adjustment between those two items, And if you need to get more air into the firebox, you can crack the door open.
