A: This unit is not well insulated, by any stretch of the imagination, so it's very hard to get the temperature where you want it and keep it there. If yours is running too hot, here are some things I would do - 1) If it's 100 degrees outside, if possible I would try to keep the smoker shaded, 2) Keep the damper closed, use less charcoal at a time, and replace it more often, and 3) Put pans or trays of cold water inside the food compartment to absorb more heat. I've also heard of people using welding blankets or encasing the smoker in bricks to better insulate it - usually to keep the temperature up, but I think it can help in the other direction too. But, by the time you do all that you might as well just buy a more expensive but heavier gauge smoker that is better insulated.
