A:  Hi Dom, I have barbecued for many years with only one unit having a temperature gauge which I found unhelpful. Last night, I slow cooked a chicken on the Char-Griller for the first time. The grill is new to me, but I find the two air vents making controlling the temperature quite easy. Once the charcoals were ready to cook, I placed the chicken on the grill using the indirect method also adjusting the vents to encourage lower temperature for a slow cooking. Over the next hour and half or so, I basted the bird twice. You may check the cooking progress with an instant read thermometer from time to time. I find grilling with charcoal more "art than science" but the Char-Griller makes grilling much easier and reliable. Good Grilling!

A:  Good afternoon. Thank you for your email. The temperature can be checked using an external thermometer if needed. There are two vents, one on each side of the grill, to control air flow and temperature within the grill. Thank you!

A:  We drilled a hole in the lid and added a thermometer. See pictures. The readings were accurate especially for cooking ribs over low heat for extended times. About $10 for the thermometer, and $8.50 for the drill bit.
