Q:I would like to know whether anyone has use this on gas grills sitting on the grill grates while cooking a rotisserie chicken? I know the issue about charcoal ashes, so I plan to put a large oven cooking sheet sitting on top of the heat plate and right underneath the grates where I have the holders. Any thoughts on this idea? Thanks

A:  I bought these to sit underneath the grill plate on one side with hickory or oak sitting on top of the wood and the pork butt sitting on top on the other side with as much space between as I could manage for smoking. Worked all right until I got an actual smoker. But in a pinch I would be do it again.

A:  Why would you need to? When you rotisserie any meat it is constantly turning. This is a way of in direct heat already. You could use these holders or not. Most of the time you sperate your coals to the sides any way. On a Weber the heat circulates, that's why Weber created there grill in a round dome shape. Keep your grill out of the wind, and you won't have any ashes flying around. Place a small bowl of water while cooking, helps to moisten your food. A lot of people that smoke food do this. Good luck grilling.

A:  I use mine all the time. Chickens, roasts, tenderloin, ribs, anything that takes some time to cook. Works great as is, no issues with ash.

A:  I personally would not use this method for cooking a chicken with the rotisserie simply because with that much heat directly under the chicken there would probably be a lot of juices dripping onto the charcoal and creating flames that would easily burn the bird. I would place a layer of charcoal on the charcoal grate and remove the cooking grate, adding more charcoal as needed. But, try your method and tweak as necessary. Won't know unless you try! The purpose of the charcoal holders is for indirect cooking, as in the smoking method.

A:  These are used with charcoal briquettes, And charcoal is the heat source. Ceramic briquettes still require gas. I don't believe this is the best choice for ceramic.

A:  The fuel holder is not for brickettes they don't burn or put off any heat so they would degrease cooking time and space .

A:  The basket measures just a fraction over 14 at it's longest point. My grill is 22.5 at top, so I can't really say if 2 will fit, but one should fit ok. (I use only 1 basket most of the time anyway)
