Since you don't want to use a spray gun, I'd recommend using a roller designed for applying paint over popcorn texture. Ceilings do not typically take on the same level of traffic as walls, and the paint has not been designed for this type of project. If the wood is like paneling and has a glossy finish, you will want to scuff-sand the walls first before painting.
