A:  You really can't. The low setting actually won't simmer it, unless you have some heavy duty cookware. I purchased this stove to 'stand up' to the tri-ply cookware, Le Cruset and my cast iron cookware. If you want to simmer, use your back burners. You actually have the small burner specifically for simmering. This stove is really smart construction, because the heavy heat that you need to attend to is actually in the front and by having higher heat in the front, you protect your electronics on the stove so that they will not get damaged.

Q:Will this work in the event of a power outage?

A:  Hi Sara, I'm Travis from The Home Depot. Thanks for visiting our site! The burner eyes on the top of the range will operate, but you will have to light the burners manually with a match or long lighter. Turn the knobs on the front to open the gas valve for each burner, light that burner and control the flame manually. The oven will not operate without electricity. It's digital function is electrically controlled and cannot be manually by-passed. Thank you for asking, -Travis

A:  It had electronic controls to ignite the burner. I've had some success with other electronic ignitions by light it with a long match when I turn to ignite.
