          A:  I think it is pretty obvious, only as deep as the hole saw blade is. If your wood is thicker than the saw, use a drill bit to drill the remaining guide hole all the way through and then use the hole saw from the other side to line up perfect and finish the hole.

              A:  Check the depth of the blade, as it might not cut through 1 1/2" thickness.

                A:  Yes, this can do it. I've used it several times for the same purpose. My experience has been that the cement board will dull the teeth quite a bit if you plan to use it for more holes down the road.

                  A:  Don't use it on cement board. Use a diamond hole saw to cut through the cement, and THEN this for the wood.

                      A:  Hi - I wouldn't use a hole saw for that.  They tend to be fairly coarse (look at how far apart the teeth are).   I think you will get the cleanest hole in EPS using a hot wire knife with some sort of template if you don't want to free-hand it.
