A:  It's an easy hook up to propane...my husband had to buy one little fitting and change the burners...he said doing the oven change was really hard to do...i don't know if that's why it runs so hot because it's been adjusted to propane.

A:  NO...I have no complaints on the burners...you can keep the temp really really low if you want or need it, and they are easy to clean

A:  I don't quite know what you mean by encased, but In our experience getting food in the burners as in a boil over has not been a problem.
