A: You can get all the parts needed at the char grill website. I had to replace the thermometer as well.
A: It is not stainless. It will rust. It is particularly prone to rust from not having the ashes removed promptly. The ashes draw moisture from the air, and then just sit there holding the moisture against the steel. If you do that, it will probably rust out fast. (Dump the ashes as soon as they are cold.). Note that you can buy an entire new ash catcher (the most prone to rust) at a reasonable price from Char-Griller.
A: Carbon steel. We keep it covered, but the seal is tight enough so that when it does get left in the rain it does not get wet inside. Had it now for three or four years no sign of rust-out. Best grill I’ve ever had in that regard and is extremely economical on charcoal. Can smoke something all day, close it up after and re-use / relight the same charcoal again the next day or next week.
A: I've had mine for 5-6 years so they might have changed the design, but there are no stainless steel components on mine. That said, I am very happy with this smoker.

A: lGoing back over 1 year since I have used this GREAT grill/smoker, I believe the grates were NOT covered with anything. I recall the instructions told me to brush on a good coat of vegetable oil and heat the grill to SEASON it like U would do with one of those old time heavy duty iron frying pans. Having done that, I have enjoyed grilling and smoking meats,fruits, fish, etc., etc. In addition I would suggest covering the ash pan with a good layer of tin foil. This protects the pan from rusting and makes it easy to clean. After using for some time U will notice some BLACK FLAKES on the interior of the top of the egg. Just use a damp paper towel to wipe them off. This flaking is NORMAL!! I verified that with the manufacturer. U may also want to purchase their smoking stone. Indirect heat/smoke coming up to flavor whatever U enjoy cooking adds super flavor. I like mesquite CHUNKS. CHUNKS (charcoal) have more heat, last longer than regular briquettes. You will still need to follow the seasoning process outlined in the owners manual. Char-Griller recommends 100% vegetable oil, olive oil, bacon drippings, etc. Make sure it does not have water in it. A: Hi, I think you meant to say 'Are the Grates already 'Cured' This is the process of coating iron in some kind of oil or fate the cure them. If you don't do this they will rust. What I do.. Take the grate out, take a paper towel and with Crisco cover the grate so hit has a light coat of oil. You can also use Corn oil, but no fat like bacon fat etc. Heat your Grill up, you want a temperature around 200 degrees. Put your oil coated grill there and let it slowly heat for 3-4 hours. You will do this ever 3-4 months. This s the same from what you do with frying pans. I hope this helps.

A: You can burn any charcoal in it but it will work much better with lump charcoal than with briquettes.

A: I have never removed mine it is a heat shield that holds the heat in the BBQ-er. The bottom is the only part I would remove and that is to dump the ashes.

A: I leave mine covered outside year round but I live in the south with no snow.
A: I have had mine stored outside covered for 2 winters with no problems. I live in the Dallas, TX area. If you live in an area with more severe winters that might make a difference, but I don't think so.
A: A lot depends on what kind of winters you have. When I lived in Wisconsin I kept mine in the garage. I was afraid the wind would shred the cover. Now that I'm in Georgia I keep it outside all year around. Clean out the ashes before you put it away and a few spider webs should be all you need to deal with when the time comes to fire it up.
A: Sure thing. You need to have the cover or parts will rust, quickly.
A: Depends on the winter. I personally would NOT leave it outside if I anticipated snow or other inclement weather. In a milder climate, I don't think it would matter.

I would only caution, the owners manual specifically states not to use wood, such as mounting any charcoal grill into a wood counter or cabinet. If you're thinking of using metal, that might work!
