A:  The offset firebox has 2 purposes. First it is used for smoking meats. you place the meat to be smoked in the main grilling area, and wood or charcoal and wood chips in the firebox to smoke. The firebox allows you to keep adding your wood or charcoal without having to open the main grilling area cover. The second use is for grilling small quanities of food. Like a steak for one person or a couple of burgers.

A:  The offset firebox is used for smoking or offset cooking. Additionally, you can sear items directly over the coals when you are smoking or offset cooking.

A:  The offset firebox on this American Gourmet is where you can build your fire and will allow you to smoke ribs and any other food you would want to cook.

A:  With considerable modifications you could. However, I would consider buying a purpose built unit, such as the Brinkmann Dual Function grill rather than recreate this unit. The Brinkmann model number is: 810-3821-SB.
