Q:Why doesn't my smoker come up to temperature? Is it the dial gauge ? It will only get to 150 even when set too high.

A: I would check the temp some other way. I don't trust the gauge on the front.

A: I had the same problem, thought it was because the cold temperature outside, then noticed it did the same thing in August. It ended up being the electric plug from the side tower to the smoker . Go around and push all the plugs in tight!

A: Hi Linda. My smoker tops out around 200 F, but varies depending on ambient temperature outside and amount of meat in the box. Make sure both that both the burner and heat elements are on, and try running it empty for a bit. If temperature is not close to 200, more diagnostics may be needed.

A: Preheat with out meat, chicken or pork then allow the meats to get to room temp before placing them on the racks try to keep the door closed as much as possible and I place mine In the sun the black color keeps mine quite a bit warmer

A: It depends on the length of the ribs and style of ribs your cooking. Baby back ribs you can get two on each shelf provided they aren't too long. Possible the same with St Louis style. Most other types will be one per shelf for a total of four. I have had to cut my ribs in half before due to the length of ribs.

A: You should cold smoke it for at least 2 hours and then on 150 for about another 3 until you reach the internal temperature of 150.

A: Certainly these smokers release some smoke from the wood cakes.
To me the smoke is minimal as I live in a more rural area.
Subtle breezes could help or hurt your cause depending on your neighbors.

A: The smoke is sealed very well in the box, but some will escape through the cracks. Your neighbors will smell the smoke if they are nearby.
